Are we talking aesthetics or functionality?
Aesthetics would be EOTech replicas for short range, even though they aren't true Holo sights in airsoft, just glorified red dots.
Aesthetics for longer ranges would be the same but with a maginfier.
Functionality would be an Aimpoint or open reflex sight. I use a Micro dot replica for my PDW mainly. I also use a magnifier and the micro dot on the ACR from time to time, but I have an ACOG coming in to replace the magnifier because I'm not crazy about how it fits on the rails

^^ this. Sights are mostly cosmetics, and just add weight. The only time I use them is when I use my DMR.

I run any cheap red dot that will hold a reasonable zero (currently a $30 NC Star). They're easy to pick up quickly and relatively useful, especially since I can't get to irons running a paintball mask.
I don't use magnified optics, I haven't ran into many situations where magnification has been necessary.

I must be part of the 1% that uses them, then.
I use an Aimpoint T-1 replica. It works well. I like the small size because it doesn't obscure my vision much when used correctly with both eyes open. Also, contrary to popular belief, I think it looks good.
I don't think that magnification is necessary in airsoft, and a replica sight works fine because there's no reciol, so you don't need a $600 sight to maintain your zero.

I don't think there's a rule anywhere that you're required to use a co-witness mount.
If I put the dot on your face and my bb hits your face, I'm using it correctly.

Even with the proper mount you wouldn't be witnessing with anything since you don't have any iron sights nubcity.

Sights are personal preference. I use it because it eases target picture. I also use it because I shoot semi. I don't like to refit more than needed. Spray-and-prayers don't need sights because they just "walk" their shots in to their target. So they have no need for optics.
One must shoot there gun, a lot, to set and "trust" their "zeroing". A round light object will not always fly straight. But if you can get a good understanding of that, optics will help you. But it is back to personal choice.
