Gas Gun Problems

I have two problems with gas guns of mine. I hardly have any experience with gas guns, particularly rifles, so I'll post and hope.
First up is an M500 I have which sends all my bbs into the sky. It's obviously the hopup, but I've never seen such an "effective" hopup. I never 0.40s arc into the air on the lowest possible setting, and I never even see 0.20s on my scope, they jump so fast. Has anybody ever had a hopup problem like this? If so, what was the issue and how could I fix it?
I've got a 1911 GBB with an odd issue. I took it apart out of curiosity and to check/clean/oil all the parts. Well, I was not prepared for the safety mech of the 1911. First attempt at reassembly, no parts of the gun would move. Second attempt, the hammer will not cock back as it should, and if you cock it back manually with your finger on the trigger, you get a fully automatic burst (very cool looking on a 1911, but too awkward to set up for use).
Any thoughts or recommendations?
