It looks like you'd have to pick up some dirt in your hands and rub it on the wood.

Mix up a nice paste of salt, mud and sand to weather the wood.

How would you suggest I apply something like that? Would I cover the wood and let it sit, or would I only rub it on and the quickly take it off?

I would think you'd rub some on and play a game or two with it on. It looks like that's what happened to the real steel gun you posted (except they probably didn't play games with it  :))

I stripped, beat, and stained the stock last night and tonight. Should be ready to be sealed in the morning. If so... pics!

You would want to leave it on for awhile.  What you are trying to do is simulate a war like environment, with dust, sand, mud, dirt, sweat and blood.  Thats why the wood looks like that.
